Sobakiri Gonoji A fresh soba noodle shop located in Sukhumvit Soi 55, also known as the Thonglor area. The key to the restaurant's standout soba is its freshness and the emphasis on quality ingredients from the source. The restaurant selects buckwheat seeds from Fukui Prefecture that still have their husks intact. These seeds are then hulled and stone-milled in-house to achieve the freshest aroma and flavor. This process requires more effort and time than using pre-made flour. This resulted in nihachi soba, which has a ratio of eight parts buckwheat flour to two parts wheat flour, and juwari soba, which is made with 100% buckwheat flour. Both types have a chewy texture and a fragrant aroma.


The soba broth or tsuyu here has a rich, deep flavor, carefully simmered from premium ingredients such as dried bonito, kombu seaweed, and shiitake mushrooms from Oita. Before mixing with the broth base that has been aged for up to one month to achieve the most well-rounded and balanced flavor, it is combined to create a dish that, when paired with perfectly cooked soba noodles, offers a refreshing and sweet finish. This unique and rare flavor is a true delight.


In addition to the signature noodle dishes, the restaurant meticulously prepares side dishes and traditional soba accompaniments. Notable items include miso grilled on a hot stone. Dashi-rolled eggs made with local chicken eggs and rich bonito broth, along with fresh fish delivered directly from Toyosu Market, and oden dishes from our affiliated restaurant Hyoutan Kappo. These dishes are crafted to pair perfectly with sake or fine beverages, making this place not just a restaurant but a destination where customers can fully immerse themselves in the culture of soba and exquisite accompaniments.✨
